Sunshine Rice
1 1/2 T. olive oil
1 1/4 c. finely chopped celery (with leaves)
1 1/4 c. finely chopped onion
1 c. water
1/2 c. orange juice
2 T. lemon juice
dash hot sauce
1 c. long grain rice, uncooked
1/4 c. slivered almonds
1. Heat oil in saucepan and saute celery & onion until tender; about 10 minutes.
2. Add water, juices & hot sauce. Bring to a boil. Stir in rice and bring back to a boil. Let stand, covered, until rice is tender & liquid is absorbed.
3. Stir in almonds. Serve immediately as a side dish to a wonderful fish recipe.
Doesn't that just sound delicious?! One of these days I'm going to try it and when I do, I'll let you know how it is. But if one of you beats me to it & it isn't as yummy as it sounds, let me know, okay? I don't want to waste my time & then I can delete the recipe from my inbox. Thanks.

I think I would make that with my chicken burritos. (Check my blog) I would have to leave out the almond-allergies, but yummers.:) I will have to try it.
